Chicken Caesar Pasta Salad
Yield: Makes 4-5 servings
Ingredients

mayonnaise

grated Parmesan cheese
|
|
1/4 |

low-fat milk
|
|

tablespoons |
lemon juice
|
|
2 |
cloves |
garlic, minced
|
|

small head romaine lettuce, cut crosswise into 1/2-inch-wide strips

|

lb. |
boneless, skinless chicken breast, broiled, grilled OR poached and thinly sliced
|
|

ounces |
twist pasta, cooked, rinsed with cold water and drained

Freshly ground pepper
|
|
Directions:
In large bowl combine mayonnaise, Parmesan cheese, milk, lemon juice and garlic. Add lettuce, chicken and pasta; toss to coat. Season to taste with freshly ground pepper.
