Chicken Salad and Apple Croissants

Ingredients

mayonnaise

plain yogurt
|
|
1/4 |
teaspoon |
freshly ground pepper

1/8 |
teaspoon |
salt
|
|
1/2 |
cup |
green grapes, quartered
|
|
1/2 |
cup |
celery, chopped
|
|
1/4 |
cup |
sliced almonds, toasted
|
|
10 |
ounces |
cooked chicken, shredded
|
|

|
apple, cored and cut into thin slices
|
|
1 |
can |
lemon lime soda
|
|
8 |

croissants or potato rolls, split lengthwise but not cut all the way through
|
|
|
|
romaine lettuce
|
|
Directions:
In a large mixing bowl stir mayonnaise, yogurt, pepper and salt to combine.
Add grapes, celery, almonds and chicken and stir to combine.
Place sliced apples into a glass filled with lemon lime soda to prevent browning. Pat dry before placing in sandwich.
Open croissant and layer with lettuce, apple slices, 1/3 cup chicken salad and more lettuce.
